The Many Delicious Uses of
Jose's White Chicken Chili Mix

Jose's
White Chicken Chili

Makes 12 cups
15.25 oz can Del Monte SouthWest Corn
Bush's Great Northern Beans
10 slices Mt Olive jalapenos, drained
1 medium sweet white onion - diced
3 cups water
2 cups whipping cream
2 baked chicken breasts - shreaded
2 packages Jose's White Chicken Chili Mix

  1. Boil water in saucepan, reduce heat
  2. Add Jose's White Chicken Chili Mix (spread evenly and using a whisk, mix approximately 5 minutes until WCC Mix is spread throughout)
  3. Add diced onion, stir and cover for 5 minutes, allowing to thicken
  4. Add corn - drained
  5. Add beans - do not drain
  6. Add jalapenos - drained
  7. Add baked/shredded chicken
  8. Mix and cover 5 more minutes
  9. Remove cover until serving
  10. Add whipping cream *Important! lower heat to lowest setting, otherwise cream will scorch bottom of pan and ruin your batch of White Chicken Chili. Whisk for 3 minutes, turn off stove.
  11. Ready to serve

Creamed Red Pepper Chicken Skillet

Makes 2 cups of sauce
16 oz jar roasted red peppers, drained
1 cup whipping cream
1/2 cup chicken stock or broth
1/4 cup olive oil, extra virgin
1 package Jose's White Chicken Chili Mix

Add all Creamy Red Pepper Sauce ingredients to a blender. Blend until smooth.

Use 1 lb from rotisserie chicken from grocer
1/2 Medium Sweet Onion
 and peppers. 

Important! lower heat to lowest setting and immediately stir until you turn off stove. Otherwise cream will scorch bottom of pan and ruin your dish.
Turn off stove.

Loaded Chicken Nachos

Use 1 lb from rotisserie chicken from grocer
11 ounce bag tortilla chips
30 ounces black beans,drained
15 ounces fire roasted corn, drained
4 ounces canned green chiles drained
¼ cup red onion, small diced
¼ cup canned sliced "tamed" jalapeno peppers (you can also use fresh but remember to remove the seeds!)
2 cups cheddar cheese, grated
2 cups monterey jack cheese, grated
1 package Jose's Custom Blend White Chicken Chili Mix


FOR THE GARNISH
cherry tomatoes, 
sliced Avocado,
diced Cilantro,
chopped Chives, 
Lime slices for serving 
Red salsa
Sour cream

INSTRUCTIONS Preheat oven to 400°F. Grease a large rimmed baking sheet with baking spray. In a medium bowl, toss together beans, corn, chiles, red onion, jalapenos, and spices until completely combined. Place tortilla chips on the baking sheet in a single layer. Sprinkle with bean and corn mixture. Top with cheeses. Bake for 10 minutes until cheese is melted and bubbly. Turn the oven on high broil and cook 1-2 minutes. Remove from heat and let cool 2-3 minutes. Garnish nachos as desired with cherry tomatoes, avocado, cilantro, chives, lime slices, sour cream, and salsa. Serve warm and crispy!

Makes 8 Tacos
Use 1 lb from rotisserie chicken from grocer
Half medium sweet onion-diced
1 cup of roasted red peppers - drained
Can of corn - small
Butter
Heavy Cream - 1 cup
1 package Jose's Custom Blend White Chicken Chili Mix
